In November we often do not know what to cook. Even at Hotel Post, we had a lack of ideas and couldn’t find inspiration. That’s why we started searching and collecting the best autumn recipes. And now, we want to share with you one of these incredibly delicious recipes. Curious? Here you go: our recipe for parsnip soup. Parsnip contains a lot of minerals and essential oils, has antibacterial effects, and keeps us full for a long time thanks to its high amount of carbohydrates. But be careful to choose small parsnips when buying them, as large ones tend to be fibrous. For the soup you need 250g of parsnips, 75g of potatoes, half an onion, a clove of garlic, 400ml of stock, and salt and pepper to taste. Peel and chop the vegetables and cook them in a pan with a little oil. Add the stock, season with salt and pepper, and cook over low heat for about 20 minutes. Blend the soup and voilà: the perfect dinner for autumn is ready!
